If you’re after a really quick dip the Beetroot, Cashew and Parmesan dip on Cookidoo is great. Using a small tin of baby beetroot it takes less than a minute to create this gorgeous fuscia dip. I serve it with seedy crackers but it’s also great with focaccia.
